Peacock comes to Victoria College after serving as Assistant Volleyball Coach at Clarendon College for one season.

Prior to her role at Clarendon, Peacock was employed at Grambling State University as assistant coach/recruiting coordinator and at University of Arkansas-Pine Bluff as assistant coach.

While at UAPB, Peacock helped lead the program to a Southwestern Athletic Conference (SWAC) Championship and back-to-back conference tournament appearances. During that span, she coached Zyonn Smith, who became the school's first AVCA All-American (2020-21), SWAC Player of the Year, and First and Second-Team All-Conference. In addition, she assisted with developing the two-time Middle Blocker of the Year and First-Team All-Conference selection.

Prior to Arkansas-Pine Bluff, Peacock served as an assistant coach and interim head coach for two years at Southwestern College. In her two years at Southwestern, she helped lead the program to its first 20-win season since 1992 and broke the school's longest winning streak with 13 in 2020. Under her guidance, the Southwestern volleyball program was crowned conference champions for the Community Character Award. She also had a student-athlete finish second in the nation in NAIA in digs, a middle hitter ranked second in the KCAC Conference in hitting percentage, and the program finished strong in the classroom with a cumulative team GPA of 3.3.

As a student-athlete at Eastfield junior college, Peacock captured her first conference tournament appearance and helped her team to the national tournament, finishing the season ranked fourth in the conference in blocks. Peacock went on to be a letterman for two consecutive years at Northwestern Oklahoma State. Peacock also served as the program's SAAC (Student-Athlete Advisory Committee) representative.

Peacock earned her bachelor's degree from Northwestern Oklahoma State in Sports Science in 2018 and a master's degree in Sports Recreational and Management from Southwestern College in 2020.
